Please note that Hong Kong is under the recommendation to stay at home, but we don't actually have a Stay at Home order in place. We tried to make these fluffy amazing Japanese milk buns, but through no fault of the recipe, we managed to screw it up twice.
Lessons learned below:

Lessons for Intro bakers:
1) Active yeast needs to be active - you need to test it. If it doesn't froth and bubble after 10 mins in the warm milk, try again with milk that's cooler or hotter, and if it still doesn't work. Get new yeast.
2) Equal Sweetener is not real sugar & yeast thrives when there's sugar, so you need sugar present in the recipe. If you're using artificial sweetener, make sure there's at least 2 teaspoons of real sugar in there for the yeast to work.
3) KNEAD. Set the timer for 10 minutes and just do it. Kneading is how the dough develops that fluffiness afterwards in the bread.
4) Use the right flour - recipe called for bread flour and we used cake flour (one had lots of gluten content and the other had very little), which is why we couldn't get the dough to develop and be bouncy, leading to a very dense dough.
5) Read the instructions! This goes without saying, we missed out on the Tangzhou (the roux like mixture). Oh, and if you're trying this - I would recommend halving the recipe, I do not think we could have fit 12 buns for one round of airfrying.

I have very good information that warm high humidity environments severely slow the virus down. Please give updates as whether your normally humid with a chance of fish balls forecast is actually severely denting the further spread. A very interesting live feed back experience experiment with real live data would be useful. You could be even more amazing.
